Our Honey

This sumptuous, delectable syrup is produced from nectar and honeydew collected from a 5 kilometer radius from the hive. Worker bees sense these essential ingredients using UV, which highlights the plants containing higher sugar content. And here starts the great act of pollination. Research suggests that from a crop source of 100 different species that feed 90% of the world’s population, 70 varieties are pollinated by bees. With the Apis population in decline this beautiful symbiotic relationship of plants producing nectar for the bees to make honey, whilst the bees pollinate the plants to germinate their seeds, is in trouble.  Some findings state that nearly half of the fruit and vegetables stocked in supermarkets today could be wiped out.

This is where the skill of the apiarist, the guardians of the bee, should be truly revered. Nurturing the colony to safeguard the future broods and make sure they thrive. Only taking the excess produced when maintaining the health of the hive, carefully monitoring the bees for signs of stress, protecting them against potential intruders and supporting them through adverse conditions.

From a healthy hive, comes healthy honey, of all different flavours encapsulated from the flowers the wandering bees collect. Common flavours of Australian Honey are derived from the native Gum trees such as Blue, Spotted or even Snow Gum.  Other milders flavours would be those of Ironbark, Yellow Box and Red Gum, with some for the strongest tastes produced from Bloodwood, Blackbutt and Red Stringy Bark.
